2022 Eurythmie, Pouilly-Fumé, Domaine Jonathan Didier Pabiot

Hailing exclusively from flint soils on slopes facing due south, this is a great example of barrel-aged Sauvignon Blanc. It’s powerful and richly textured, with a complex nose of ripe citrus, stone fruit, toasty and nutty aromas, but – like all Pabiot’s wines – is shot through with cleansing acidity. There’s a lot going on here and yet the effect is seamless. It will be fascinating to chart its development in bottle.
